Calcium chloride 33%
The calcium in milk is determined by many dairies during the pre-heat associated with the Kaseinmizellen. Thus, the milk loses some of the natural Labfähigkeit. Bad jelly formation and massive losses of milk components are the consequences. To prevent this, calcium chloride is added. The addition sets the stage for an even syneresis.
